Only after fermentation is complete can the process of clarification begin. Wine is siphoned from one barrel to another, with the goal of leaving behind the solids and dead yeasts that had remained in the fermentation tank. To help the process along, winemakers may add substances such as clay or egg whites to the wine, which cling to the unwanted solids and force them to settle at the bottom of the tank.
Once clarified, the wine is transferred to another barrel, where it will be ready for the final stage: bottling and aging.
