0.38 liters of water, boiling

Preheat the oven to 200 °C.
Wash the prepared duck and pat dry. Then rub inside and outside with salt and pepper. Put it in a roaster with the breast side down, pour the boiling water over it and put it in the oven for 2 1/2 hours. Fry the duck on all sides until brown and crispy.
Half an hour before the end of the cooking time, put the duck on the grill of the oven. Put it back into the oven and place the roaster underneath to catch the fat. Sprinkle the duck with a little cold water and roast to the end. This will make the skin nice and crispy.
I recommend potato dumplings and red cabbage.
