Prague ham with apples

3 kg ham, Prague ham
8 apples, firm
8 shallot
3 tablespoons honey, neutral
5 sprigs thyme
1 liter apple juice
salt and pepper

Free the Prague ham from the net, add pepper and place in a casserole dish or sauté. Place in the preheated oven at 175°. Rind to the top. Add some apple juice. Let it sizzle, fill up again and again with apple juice. After 2 1/4 hours, add the apples, which have only been pitted and echeloned, as well as the peeled and halved shallots. Also add the honey and thyme twigs. If there are no thyme twigs at hand, please add 2 tablespoons of dried thyme. Let it stew for another 3/4 hours. After a total of 3 hours of roasting, take the meat out of the oven and cut into slices. Slices can (should) be halved again, otherwise the portions will be too large. Season sauce with salt and pepper if necessary. Pour sauce over meat and puree.
Serve with parsley root / mashed potatoes. It is also a delight as a menu sequence.
