KACHKOLAR MANGSHER TIKIA

(MUTTON AND RAW BANANA CUTLETS)

More often seen separately than together, here mutton and raw bananas come together in a Malayali-inspired fusion. Of course, the mustard adds the distinctive Bengali tang.

Preparation time: 20 minutes

Serves: 4 persons

200 gm mutton, boneless

3 raw bananas

50 gm coconut paste

30 gm green chilli paste

10 gm turmeric powder

30 gm ginger paste

40 ml mustard oil

2 gm raw papaya paste

1 banana leaf

Salt and sugar to taste

Mix all the ingredients, except the banana leaf, well.

Refrigerate for 30 minutes.

Take the banana leaf, heat it over a flame for a few seconds, and cut into 4 equal parts.

Divide the mutton mixture for these 4 squares.

5.

Place each part on the roasted banana leaf and wrap into rectangular parcels.

6.

Steam for 10 minutes.

7.

Remove and serve hot in a banana leaf.
