(STEAMED BHEKTI WITH FRESH CORIANDER)
This is a unique combination of the pliable Bhetki mixed with aromatic coriander, which is steamed to enhance its flavours.
Preparation time: 40 minutes
Serves: 2 persons
4 pieces of Bhetki fillet (approximately 70 gm each)
For the first marinade:
¼ tsp green chilli paste
¼ tsp ginger paste
¼ tsp garlic paste
¼ tsp salt
5 ml lemon juice
300 gm coriander leaves
For the second marinade:
75 gm curd
½ tsp green chilli paste
5 ml refined oil
¼ tsp garlic paste
½ tsp ginger paste
¼ tsp flour
2 banana leaves
Salt to taste

Wash and clean the fish. Wash and drain the coriander leaves. |

To make the coriander paste, in a blender, grind the coriander leaves along with one green chilli, 2 ml of lemon juice, and a pinch of salt. |

In a bowl, add all the ingredients of the first marinadewith half quantity of the coriander paste made. |

Add the fish and marinate for 15 minutes. |

In a bowl, beat the curd till it is creamy. Add all the ingredients of the second marinade, along with the remaining coriander paste. Adjust seasoning and mix well. |

Take the fish pieces out of the first marinade and dip them in the curd mixture. Keep for 20 minutes. |

Wrap each fish in a separate banana leaf (8’ x 6’). |

Steam for 15 minutes and serve hot. |
