guacamole with grilled pineapple

When I opened my first restaurant, Sabores by Chef James, I wanted to create a guacamole bar with different touches and textures, but without sacrificing the speed and ease so characteristic of the classic recipe. After a good meeting with my chefs, we added an original touch: grilled pineapple. It was a hit at my restaurant, and it will surely be a hit in your home.

INGREDIENTS:

2 Hass avocados

½ red onion, chopped

1 jalapeño, chopped

juice of 1 lemon

2 tablespoons cilantro, chopped

4 tablespoons grilled pineapple (see chef james tip below), chopped

corn tortillas

PREPARATION:

1. In a big bowl, mash the avocados with the back of a fork. Season with salt and add the rest of the ingredients.

2. Keep mixing until all the ingredients are evenly combined.

3. Serve with the corn tortillas.

chef james tip >> To make the pineapple spectacular, grill it over very high heat. Don’t panic when it’s time to flip it; usually 5 minutes on each side will yield the perfect marks.
