This recipe is both delicious and super-nutritious. You can make it in very little time and it’s ideal for any time of the year. This salad will keep you satisfied for a long time, since chickpeas, considered a legume, are full of fiber. It’s fantastic served cold, and for vegetarians, it’s a satisfying main dish.
INGREDIENTS:
4 pieces pita bread
olive oil
1 red onion, chopped
2 cloves garlic, minced
½ teaspoon cumin
½ teaspoon paprika
½ teaspoon cayenne pepper
½ pound chickpeas
1 lemon, juice and zest
1 tablespoon parsley, chopped
4 ounces feta cheese
PREPARATION:
1. Brush the pita bread with olive oil, and toast it on both sides in a pan over medium heat.
2. In another pan over medium-high heat, add a drizzle of olive oil and sauté the onion, garlic, and spices. Add the chickpeas and continue sautéing. Add the lemon juice and zest and sauté for 2 more minutes. Immediately add the parsley, stir, and remove from the heat.
3. To finish, add a dash of olive oil and the feta cheese, and serve with the toasted pita bread.
