26. Baby Bok Choy with Yam and Ginger

Ingredients:

8 heads baby bok choy
-
4 scallions, white part, sliced

1/4 cup minced fresh ginger

1/4 cup light sesame oil

2 cups peeled & finely diced sweet potato or yam

Sea salt

2 teaspoons maple syrup
-
2 tablespoons tamari
-
2 tablespoons freshly squeezed lime juice

1/2 teaspoon toasted sesame oil (optional)
Directions:
Trim the bases from the bok choy & discard. Trim the leaves from the stems & cut both crosswise into bite-size pieces.
Heat oil in a pan over med heat, then add the scallions & ginger and sauté for 30 seconds. Add the sweet potato and a pinch of salt and sauté for an additional minute. Add the bok choy stems, tamari, and maple syrup and sauté for 2 minutes more. Add the bok choy leaves, 1/2 teaspoon of salt, lime juice, & the toasted sesame oil. Cook for about 2 mins, then taste.
Serve immediately.
