Ingredients:

1 tablespoon Lime juice, freshly squeezed

1/4 teaspoon Pepper, freshly cracked

1/4 teaspoon Salt

1 teaspoon Cinnamon, ground

3 pounds Carrots, whole, peeled

1 teaspoon Turmeric, ground

1/2 teaspoon Coriander, ground

3 pieces Garlic cloves, minced

Dill/parsley, fresh

Olive oil, extra virgin
Directions:
Set the oven at 400 degrees Fahrenheit to preheat.
Spread out the carrots on a greased baking sheet, so they form a single layer. Toss with the olive oil (3 tablespoons), minced garlic, salt, pepper, and spices.
Place in the oven to bake for about forty to forty-five minutes or until caramelized and tenderly cooked.
Serve garnished with fresh parsley/dill.
