If recipes were high school students, I feel like the casserole would be the slightly overweight girl who wears braces and plays third-chair clarinet. And I adore her. Probably because I was that exact girl as a teenager, and I like to believe that people would’ve seen I was cool if they’d only given me a chance … just like casseroles. You take all of your favorite ingredients, mix them together in Pyrex, and bake them into something amazing. Casseroles are awesome for a potluck and the perfect dish to make for a new mama who doesn’t have time to cook dinner. I mean, seriously, what’s not to love? Okay, there’s maybe one thing. Casseroles don’t always look as pretty as they taste, but I’m about to change all of that. In this chapter, I really want to show you how gorgeous a casserole can be. Sometimes it means using an interesting baking dish. Sometimes it means adding a garnish to make the recipe pop. But I promise you can serve any of these casseroles at your next dinner party with pride.
