On Toast

My go-to easy midweek dinner is ‘things on toast’ and there is usually at least one thing on the menu at Cook House on toast too. Because a) who doesn’t love toast and b) it’s easy. Which doesn’t mean it can’t also be delicious and interesting.

A dinner of two pieces of buttered toast with two toppings is my ideal. One might be eggs and chorizo, or lemony, garlic courgettes, or ricotta, honey and rocket; the other could be bacon, broad beans and parsley or black pudding and mint, or duck hearts, chorizo and chestnuts. There are usually some scraps in the fridge that can stretch to become a toast topping.

Use nice large slices of sourdough and lots of butter too.
