Still Lemonade

MAKES 4 litres

• 2 litres water

• 2 litres caster sugar by volume

• 800ml lemon juice, about 14 lemons

Heat the water and sugar together gently in a large pan, stirring so the sugar doesn’t all clump at the bottom. Once the sugar has dissolved, bring to the boil, then remove the pan from the heat and leave to cool slightly before adding the lemon juice. If there are any pips left in by accident they will float to the top because of the warmth, so scoop them out.

You can now bottle the lemonade into sterilized bottles (see page 280) and keep it in the fridge. It is a cordial so will need diluting before serving. I use one part lemonade to three parts chilled water or soda. It's great with gin and soda!
