Chicken Cherry Salad

If you’re getting bored with regular chicken salad, try this variation. A pop of cherry is in every bite of this unique chicken salad. You should be able to find the summer savory in your grocery store’s spice aisle.

SERVES 4

112 pounds poached chicken breast, cubed

12 Vidalia onion, diced

23 cup halved, pitted fresh sweet cherries

14 cup Whole30-approved mayonnaise, such as Primal Kitchen brand

2 tablespoons tarragon vinegar

14 teaspoon celery seed

14 teaspoon sea salt

14 teaspoon white pepper

14 teaspoon summer savory

4 Boston lettuce leaves

1 avocado, sliced

  1. In a medium bowl, combine the chicken, onion, cherries, mayonnaise, vinegar, celery seed, salt, pepper, and summer savory until all ingredients are evenly distributed.
  2. Place a lettuce leaf on each plate. Evenly distribute the chicken salad among the lettuce leaves. Top each with avocado slices. Serve.
