Green Bean Salad with Orange Vinaigrette

SERVES 8

2 pounds French green beans (haricot verts), steamed

13 cup toasted hazelnuts

14 cup dried tart cherries

1 small onion, minced

2 tablespoons extra-virgin olive oil

3 tablespoons white wine vinegar

3 tablespoons freshly squeezed orange juice

1 tablespoon orange zest

12 teaspoon Dijon mustard

  1. Toss together the green beans, hazelnuts, and cherries in a large bowl. Set aside.
  2. Whisk together the onion, oil, vinegar, orange juice, orange zest, and mustard until well combined. Drizzle over the green bean mixture and toss again. Serve warm or cold.
