Shrimp Zoodles with Chinese Chives

Chinese chives, occasionally labeled garlic chives, look like chives but are flat and have a light, fresh-garlic scent.

SERVES 4

2 tablespoons coconut oil

3 cloves garlic, minced

1 pound medium shrimp, peeled and deveined

1 tablespoon ginger juice

1 tablespoon fish sauce

1 pound Chinese chives, cut into 2-inch lengths

112 pounds raw zucchini noodles (“zoodles”)

  1. Heat the oil in a large wok over medium-high heat. Add the garlic and stir-fry until fragrant and just beginning to brown, about 2–5 minutes.
  2. Add the shrimp, ginger juice, and fish sauce. Stir-fry until the shrimp is cooked, about 3–5 minutes. Add the chives. Stir-fry for 2 more minutes or until the chives have wilted.
  3. Add the zoodles. Stir-fry 5 additional minutes or until the zoodles are soft. Serve immediately.

BE A WOK STAR

Buy a lightweight cast-iron wok for best results. Round-bottom woks give you the most control over the food and flame. Use the smallest burner so the flame is concentrated on the bottom of the wok.
