Chimichurri

This Argentinian sauce is traditionally served over steak.

YIELDS ABOUT 1 CUP

112 cups fresh Italian parsley

3 tablespoons chopped fresh oregano

34 cup olive oil

12 cup red wine vinegar

3 cloves garlic

1 dried red pepper

14 teaspoon ground cumin

14 teaspoon salt

Place all ingredients in a food processor. Pulse until mostly liquid. Pour into a bowl. Serve at room temperature.
