This chunky sauce is great on tacos or over fish. If you would like a smoother sauce, combine the ingredients in a food processor rather than by hand.
13⁄4 pounds tomatillos
3⁄4 cup finely chopped white onion
1⁄2 cup finely chopped cilantro or flat-leaf parsley
1 tablespoon minced fresh oregano
3 tablespoons lime juice
2 serrano peppers, chopped
2 cloves garlic, minced
1⁄2 teaspoon salt
1⁄2 teaspoon freshly ground black pepper
Tomatillos look like small green, yellow, or purple tomatoes in a papery husk. Look for unblemished fruits that are firm to the touch. The husk needs to be removed prior to eating.
