Chunky Salsa Verde

This chunky sauce is great on tacos or over fish. If you would like a smoother sauce, combine the ingredients in a food processor rather than by hand.

YIELDS ABOUT 3 CUPS

134 pounds tomatillos

34 cup finely chopped white onion

12 cup finely chopped cilantro or flat-leaf parsley

1 tablespoon minced fresh oregano

3 tablespoons lime juice

2 serrano peppers, chopped

2 cloves garlic, minced

12 teaspoon salt

12 teaspoon freshly ground black pepper

  1. Bring a pot of water to a boil. Add the tomatillos and cook for 5 minutes. Remove from the water and allow to cool slightly.
  2. Dice the tomatillos. Place in a large bowl. Add the remaining ingredients and stir to evenly distribute. Refrigerate any leftovers.

TOMATILLO TIPS

Tomatillos look like small green, yellow, or purple tomatoes in a papery husk. Look for unblemished fruits that are firm to the touch. The husk needs to be removed prior to eating.
