Zucchini au Gratin

Zucchini becomes velvety smooth when prepared this way.

SERVES 4

4 zucchini, cut into 14-inch-thick coins

1 large onion, sliced thinly

1 cup sour cream

14 cup milk

12 teaspoon sea salt

12 teaspoon white pepper

14 teaspoon freshly ground nutmeg

34 cup shredded extra-sharp Cheddar cheese

  1. Preheat oven to 350°F. Grease an 8" × 8" baking dish.
  2. Bring a large pot of water to a boil. Add the zucchini and onion and boil until the zucchini is fork-tender, about 5–10 minutes. Drain thoroughly.
  3. Mix together the sour cream, milk, salt, pepper, and nutmeg in a large bowl. Add the zucchini and onion and stir. Pour into prepared baking dish.
  4. Sprinkle with cheese. Bake 20 minutes or until bubbly and hot.
