Zucchini au Gratin
Zucchini becomes velvety smooth when prepared this way.
SERVES 4
4 zucchini, cut into 1⁄4-inch-thick coins
1 large onion, sliced thinly
1 cup sour cream
1⁄4 cup milk
1⁄2 teaspoon sea salt
1⁄2 teaspoon white pepper
1⁄4 teaspoon freshly ground nutmeg
3⁄4 cup shredded extra-sharp Cheddar cheese
- Preheat oven to 350°F. Grease an 8" × 8" baking dish.
- Bring a large pot of water to a boil. Add the zucchini and onion and boil until the zucchini is fork-tender, about 5–10 minutes. Drain thoroughly.
- Mix together the sour cream, milk, salt, pepper, and nutmeg in a large bowl. Add the zucchini and onion and stir. Pour into prepared baking dish.
- Sprinkle with cheese. Bake 20 minutes or until bubbly and hot.
