Berry-Kiwi Fruit Salad

This simple dish lets the flavors of summer berries shine through. As an added bonus, berries are packed with antioxidants and fiber.

SERVES 8

1 cup raspberries

1 cup blackberries

1 cup blueberries

1 pint strawberries, diced

2 cups peeled, diced kiwi

1 cup water

1 cup sugar

14 cup fresh mint

  1. In a large bowl, toss together the berries and kiwi.
  2. In a medium saucepan, heat water, sugar, and mint to a boil. Stir until the sugar is dissolved, then boil, uncovered, for about 20 minutes. (It should reduce slightly and look thick.) Strain out any large pieces of mint. Allow to cool.
  3. Drizzle 3 tablespoons syrup over the fruit and then toss. Serve immediately. Refrigerate any leftover syrup in an airtight container for future use.

KIWI FACTS

Known as “kiwifruit” in much of the world, so as to differentiate it from the flightless kiwi bird, the kiwi is an edible berry. Bright green or yellow inside and studded with black seeds, the kiwi contains over 100 percent of the RDA of vitamin C. It is also rich in a protein-tenderizing enzyme, which makes it a popular ingredient in recipes that use tough cuts of meat such as beef ribs.
