RED WINE VINAIGRETTE

Adding a bit of honey to vinaigrette softens the sharpness of the vinegar, and a dash of Tabasco contributes a little kick of spice; you can certainly leave it out if you prefer.


PREP: 5 minutes COOK: none COOL: none

       ¼ cup red wine vinegar

       ½ cup extra virgin olive oil

       2 tablespoons honey

       ½ teaspoon kosher salt

       ½ teaspoon freshly ground black pepper

       Dash of Tabasco sauce (optional)

1. In an 8-ounce screw-top jar, combine the vinegar, oil, honey, salt, pepper, and Tabasco (if using). Screw on the lid and shake until well mixed.

2. Use at once or store in the refrigerator for up to 5 days. Shake well before using.
