THANKS

It was so special to create a book that celebrates Australian food. I couldn’t have done it alone however and there is an endless list of people I’m grateful to. Firstly, thank you to my long time friend, stylist and chef Emma Knowles, who I have known now for over 25 years. She went above and beyond. Also, a huge thanks to my business manager, Pip Sheldon, for her tireless efforts and ability to always pull everything together. Many people have been involved in this book, but without these two it most certainly wouldn’t have happened.

I’d like to thank all of my staff, especially my team of chefs. I’m always thankful for their passion, hard work and sheer dedication to the job. I feel lucky to have such an incredible team.

A huge thanks to everyone at Murdoch, in particular Jane Morrow, Madeleine Kane, Katie Bosher and editor Kay Halsey. Thank you for a great collaboration. Thanks as well to talented photographer Will Meppem and to designers Jacqui Porter and Dan Peterson of Northwood Green.

I’m especially thankful to my business partner Bruce Solomon and of course my wonderful family, Sarah, Harry and Amelia, for their support and for giving me the freedom to do what I love.

Special thanks to my suppliers and all the farmers, growers and producers out there. I’ve always said that we chefs are only as good as the quality of the ingredients we use so I cannot thank you enough for all your hard work in bringing us the best. We couldn’t do it without you.

Last, but not least, thanks to you and everyone who has bought my cookbooks, dined at my restaurants or simply enjoyed my food over the years.
