Toss the potatoes in a large bowl with the oil, garlic powder, Italian seasoning, and Cajun seasoning, if using. Cajun seasoning is optional. Add salt and pepper to taste.
Cook potatoes in the air fryer basket for 10 minutes at 400 degrees. Shake the basket as you toss and cook the potatoes for a further 8 to 10 minutes, or until they are golden and soft.
Before serving, drizzle boiled potatoes with lemon juice and top with parsley.
