These Salsa Chicken Taquitos in the Air Fryer couldn't be much simpler! Chicken that has been cooked and shred is combined with salsa, coated in cheese, then air-fried until crispy. 20 taquitos can be made using this recipe!

Place the shredded chicken (approximately 4 cups) to a mixing dish with at least 1/2 cup and up to 2/3 cup of salsa, and toss to combine. As may be necessary, increase the salsa. 

Place some tortillas on a clean surface in batches. Put some of the chicken salsa and a little cheese on one third of the tortilla.

Before placing each one onto a rimmed metal baking sheet, fold it over and roll it tightly, beginning with the end with the chicken and cheese. R epeat with the remaining tortillas, chicken, and cheese.

Then liberally spray olive oil spray over all of the rolled tacos.

Set your air fryer to 350–360° and begin by working in batches of four or five tacos each. Cook in the air fryer for 4 to 5 minutes, or until crispy and brown.

Continue with making the remaining taquitos.

Serve with any toppings or as is.

NOTES 

We like ours served on shredded iceberg and topped with plain nonfat greek yogurt or sour cream, jalapeño hot sauce (siete is our favorite brand), fresh pico de gallo and cotija or feta cheese.
