If you can, buy organic eggplant. Instead of conventional ones, it tastes lot better.
Increase the nutritional value of this dish by using whole wheat bread crumbs.
Use a fork to hold the eggplant pieces while you bread them. This makes it much easier to apply the breadcrumb crust without getting your hands messy.
The eggplant slice should be placed on a fork and held in one hand. Apply a thin layer of egg-flour batter evenly on all sides using a small, clean brush. Place the breadcrumbs on one side of the battered slice before flipping it over to coat the other side. To apply a beautiful, even coating, repeat the process a few times.
For a fresher flavor, top the marinara sauce with fresh mozzarella cheese. Fresh mozzarella is readily available in nearby grocery stores.

Slice the eggplant into about 12" thick pieces. Slices should be salted on both sides and left for at least 10 to 15 minutes.
To prepare the batter, combine the egg, water, and flour in a small bowl.
Combine the bread crumbs, parmesan cheese, Italian seasoning mix, and some salt in a medium shallow plate. Fully mix.
Now evenly spread the batter over each slice of eggplant. To equally coat all sides, dip the battered slices into the breadcrumb mixture.
Slices of breaded eggplant should be placed on a clean, dry dish with oil sprayed over them.
Set the Air Fryer to 360F for frying. After that, fry the eggplant slices for around 8 minutes on the wire mesh.
Fresh mozzarella cheese should be lightly sprinkled on top of the air-fried pieces before adding around 1 tablespoon of marinara sauce. Once the cheese has melted, cook the eggplant for an additional 1 to 2 minutes.
Serve warm alongside your preferred pasta dish.
