Ingredients:
- 1 diced onion
- Spice blend of choice
- 2 diced and peeled carrots
- 1 cup lentils of choice
- 2 cups veggie broth
- 1 can diced tomatoes
- 3 cloves minced garlic
- 1 cubed sweet potato, peeled
- 1 chopped stalk of celery
- 1 cup red lentils
- ¼ cup raisins
- Diced greens of choice
Directions:
- Sauté the onions for 3 minutes, adding in more broth and water when needed.
- Add in garlic and cook for a minute, and then add about half of the spices, the veggies, and the raisins, cooking for another minute or two
- Add in lentils, stir it and then set it on normal for 10 minutes of pressure release, naturally coming down
- Take off lid and then put in tomatoes and spices, sautéing them, cooking for 5 minutes, adjusting as needed. Serve it over quinoa.
