14.    Lentils and wild rice

Ingredients: 

-        Lentils and rice, soaked before cooking 

-        ¼ cup brown rice, and brown rice 

-        ½ cup of green or black lentils 

-        1 cup sliced mushrooms 

-        1 chopped stalk of celery 

-        ½ chopped onion 

-        3 cloves minced garlic 

-        1 T Italian seasoning 

-        1 t coriander and fennel seeds 

-        A bay leave 

-        ½ t black pepper 

-        ¼ t red pepper 

-        2 cups of veggie broth 

Directions: 

-        Mix in rice and lentils and soak it for 30 minutes before draining 

-        Sauté all veggies in pressure cooker on high for 5 minutes, adding water when needed 

-        Grind the lentils along with rice and then mix with spices and both into pressure cooker 

-        Cook it on manual high pressure for 9 minutes. Once done, let it come down naturally 

-        Once released, stir it, and then if more liquid is there, let sit for 5 more minutes to absorb. Serve with veggies
