24.  Mexican Meatloaf

Ingredients: 

-        2 pounds beef of choice 

-        1 t of the following: paprika, salt, pepper, garlic powder, cumin, onion powder, chili powder 

-        1 T olive oil 

-        1 egg 

-        ¼ cup tapioca starch 

-        1 cup roasted salsa with 1/3 of it divided 

Directions: 

-        Put all ingredients in a bowl but the oil, hand mixing this 

-        Create a loaf and make sure that this is firm. You can wrap in foil and put in a steamer rack if that’s not firming up 

-        Put the olive oil under the bowl, sautéing it to melt if needed 

-        Put the meatloaf onto there and put the salsa on top, tapping the meat/stew function so that it’s 35 minutes on normal pressure. Wait for completion before you release it 

-        Remove the loaf and then garnish with cilantro and other spices, along with some cheese if you desire.
