Ingredients:
- 1 pound chicken breasts
- 1/3 cup water
For the BBQ sauce
- 1.2 cup ketchup
- ¾ t barbecue seasoning
- ¼ t dried Italian seasoning
- Dash of red pepper flakes
For the salad:
- Any sorts of greens that you want in there, along with some pine nuts, flax seeds, shredded cheese
- Salad dressings you want (this area is more of what you want in your salad
Directions:
- Coat the instant pot with oil and put the chicken and water in there. Let it steam for eight minutes
- Prepare the salad by putting what you want in it on a bowl.
- Mix together all of the ingredients for the BBQ sauce and then taste and adjust to what you want.
- Once it’s done, quick pressure release. Slice the chicken into ½ strips and make sure you don’t touch the sides of the instant pot
- Put the BBQ sauce over it and then sauté it for 18 minutes. For the first 10 you can mostly just watch it, but once it thickens, you should watch it. move the chicken around so the sauce thickens and sticks. When almost all is stuck, remove and put on a serving tray
- Pour water in instant pot to help prevent it from sticking, and put the chicken on top of the salad greens and dressing and then serve. You can have this for dinner, or even as a lunch/late lunch meal if you so desire.
