Ingredients:
- 2 T of divided olive oil
- 3 cloves minced garlic
- 1 can diced tomatoes
- ½ t black pepper
- 1 t of paprika and dried parsley
- Pinch cayenne pepper
- 1 minced onion
- 1 chopped red pepper
- 1 t salt
- 2 cups whole grain cubed bread
- 1 cup dry red wine
- 2 pounds of ground turkey of choice
- 2 eggs
- 3 T sour cream
- 2 T Worcestershire sauce
- 1 T soy sauce
- 3 T BBQ sauce and ketchup
- 1 cup of crushed drained pineapple
Directions:
- In a skillet add in the olive oil, veggies, and the garlic, sautéing until most of the fluid is gone, they’re almost see-through, and they’re browned
- Add in the bread crumbs, olive oil, and the seasonings and then sauté these until they’re toasted
- In a separate mixing bowl to all of this, put the turkey, sour cream, soy and Worcestershire sauces, and eggs into the bowl and mix it well
- Put the seasoned mixture into the turkey mixture and then put it in a ceramic dish. You can use a loaf pan as well
- Top it with ketchup and BBQ along with some of the pineapple as well
- Put foil on top and seal it to make sure it’s moist
- Put water in bottom of instant pot, then the trivet, then the meatloaf. Set this to meat setting, and let it naturally depressurize. Let it sit and sit to cool for about 5 minutes. Slice to enjoy.
