35.  Mexican Polenta

Ingredients: 

-        1 bunch of sliced green onion 

-        2 cups vegetable broth 

-        1 cup of corn meal 

-        1 T chili powder 

-        1 t oregano 

-        ¼ t cayenne pepper 

-        2 t minced garlic 

-        2 cups of boiling water 

-        ¼ cup chopped cilantro 

-        1 t cumin 

-        ½ t smoked paprika 

Directions: 

-        Sauce the green onion and minced garlic in IP until it smells, usually about 3 minutes, putting water in there to prevent burning 

-        Put the rest of the ingredients in there and stir it together 

-        Put it in the instant pot on high pressure for about five minutes, with 10 minutes of a natural pressure release 

-        Serve it as is in some glass dishes for the best results.
