37.  Marinated Artichokes

Ingredients: 

-        4 artichokes 

-        2 t balsamic vinegar 

-        1 t dried oregano 

-        ½ t sea salt 

-        2 T lemon juice 

-        ½ cup olive oil 

-        2 minced garlic cloves 

-        ¼ t black pepper 

-        Directions:

- wash the artichokes with cold water and remove the stems so they’re ½ an inch from the base. Take off the lower petals and cut off the top of the artichoke. Trim the petals with shears 

-        Put the artichokes with the bottom at the top on the inner pot with the steamer basket and 2 cups of water on top 

-        Choose the steam option and let it steam for 8 minutes 

-        While steaming use the rest of the ingredients to prepare the marinade by mixing it together and then shaking to incorporate everything. 

-        Once done, remove the artichokes and let them cool. Halve them and take out the center and the cores.  You should take out the thistle that protects the heart. 

-        Put the marinade over the artichokes, turning it to fully cover the heart with the marinade. Let them sit for anywhere from 30 mins to a night, depending on what you desire. 

-        Sear the artichokes on the grill for about 5 minutes before serving.
