40.  Chinese pork shank

Ingredients: 

-        3 cups carrots 

-        2 cups of green radish 

-        1 pound of pork shank 

-        1 T ginger 

-        1 package dried jujubes 

-        1 cheni, which is a dried mandarin peel 

-        Sea salt to taste 

-        3 cups cold water 

Directions: 

-        Clean the pork shank by boiling some water and boil the shank for at least 4 minutes to clean it and get rid of extra fat. Remove and put it in tap water 

-        Prepare ingredients by soaking cheni in cold water and washing the jujubes in cold water 

-        Pressure cook soup by putting it in pressure cooker. Pour rest of water into pot and don’t’ add salt. Close lid and cook on high pressure for 30 minutes. Let it naturally release.  

-        Add sea salt to taste, and then serve immediately
