47.  Kale, sausage, and potato Soup 

image

       1 onion, chopped 

-        5 cloves minced garlic 

-        1 pound ground chorizo or sausage, depending if you like it spicy 

-        1 T thyme 

-        2 t salt 

-        1 t crushed red pepper 

-        2 quarts chicken stock 

-        1 cup chopped kale 

-        1 cup coconut milk 

-        2 cups cubed potatoes 

Directions: 

-        Put all of the veggies and the meat into the IP and sauté this until nicely browned 

-        Put in the potatoes and the seasoning, along with the chicken stock in there next 

-        Press the soup button on the IP and then let it cook for 25 minutes. Turn off heat, and use the quick release 

-        Put the kale and coconut milk in there and sauté until the kale is wilted and the cream is warmed up. Serve with parmesan if you would like.
