52.  Taco Soup

Ingredients: 

-        4 chicken thighs with the skin removed and bone there 

-        1 cup black beans 

-        1 cup chicken broth 

-        ½ diced onion 

-        1 t coconut oil 

-        1 cup corn 

-        1 cup salsa of choice 

-        2 t taco seasoning of choice 

-        ¼ cup diced pepper 

Directions: 

-        Melt the oil and sauté the onion and pepper, then add in the chicken. Brown everything on both sides 

-        Add in rest of ingredients and then use the soup setting on this for about 4 or so minutes 

-        Remove bones from chicken and shred it, putting it back into pot 

-        This is best served with some shredded cheddar cheese on top along with some sour cream. You can also have some ancho chops for an added bonus as well.
