56.  Mango coconut rice pudding

Ingredients: 

-        ¾ cups Arborio rice 

-        1 can coconut milk 

-        ½ cup brown sugar 

-        1 t vanilla 

-        2 cups water 

-        1 t salt 

-        ½ cup half and half 

-        1 cubed and peeled mango 

-        For garnish ¼ cup shredded coconut and ¼ cup almonds, shredded and pulsed together 

Directions: 

-        Take the rice, coconut milk, salt, water, and sugar and put it in pressure cooker. Manually set it for 7 minutes at high pressure. 

-        Unlock lid and take out the rice. Put in the rest of the ingredients and mix it 

-        Serve with the garnish on top for the best result.
