Ingredients
3 teaspoon olive oil (divided)
1/2 cup minced onions
1/2 lb 93% lean ground beef
1/2 lb 93% lean ground turkey
1/3 cup whole wheat seasoned breadcrumbs
1 egg (beaten)
2 tablespoons tomato paste (divided)
Kosher salt to taste
Pinch black pepper
1 tablespoon all-purpose flour
1 teaspoon red wine vinegar
2 teaspoon Worcestershire sauce
1/4 teaspoon mustard powder
5 oz sliced mushrooms (1 oz finely chopped)
1 1/4 cup reduced sodium beef broth
Instructions:
- Heat a teaspoon of oil in an Instant Pot set to the Sauté mode and sauté the onions in it for 4 minutes.
- Combine half the onions with the beef, chopped mushrooms, egg, breadcrumbs, 1 tablespoon tomato paste, turkey, ¼ cup beef broth, salt and pepper in a bowl.
- Mix together the flour with a cup of broth until smooth and mix in the vinegar, mustard, remaining onions, remaining tomato paste and Worcestershire sauce.
- Shape the meat mixture into 20 meatballs and brown them in the Instant pot with a teaspoon of oil, set to the Sauté function for 2 minutes.
- Turn the balls and cook for another 2 minutes.
- Add the un-chopped mushrooms and the prepared sauce.
- Select the Manual function for 10 minute at high pressure.
- Do a natural release of pressure.
