INTRODUCTION

BECKY: This is the book I needed about 20 years ago when I started work. My first proper job was for a magazine based on an industrial estate where you had to take your lunch with you or live on dodgy bacon rolls. I got very bored with sandwiches. I have worked in London for many years since then, and our options have got a hundred times better in that time: you can buy vegan, sushi, gluten-free, green juices, chia porridge … anything you want. I have done all that, but a while ago I realized that lots of the takeout options cost a lot for what they are and they can be on the mean side (half an egg, anyone?). Queuing up for your lunch is boring and doesn’t feel like a break.

You will find lots of ideas in this book that will give you a delicious lunch without hassle and for a sensible price. No one has hours to spend making lunch in the morning, so the ideas are quick, realistic and you can take them on the train, tube/subway or bus. And all the recipes are packed with nutrition, which is where Michelle comes in . . .

MICHELLE: In the past 10 years since I set up Mission Nutrition, my nutritional therapy practice, I’ve helped countless clients take control of their own diet and reach their personal health goals. Lunch is always the meal they struggle with the most. Lack of time and inspiration, shift work and travel are all factors. All sorts of professionals come through my door: air stewards, paramedics, teachers, social workers, doctors, business people, police officers and commuters, to name a few, and I’ve devised lots of really practical and portable breakfasts, lunches and snack ideas to fit into their busy schedules.

It’s so rewarding when clients tell me how much better they feel after a few weeks of eating a new nourishing diet. A little effort, planning and a list of good ideas can dramatically improve anyone’s health and energy levels.

I was delighted when Becky asked me to work with her on this book so that I could share my nutrition experience with more people. I thoroughly believe that food should look and taste delicious as well as being good for you, and all our recipe ideas are not only healthy and nutrition packed, but they taste really great too.
