CURRIED BEEF PITAS WITH CUCUMBER SAUCE

A good friend gave me this recipe when I first got married. Because some of the ingredients weren’t familiar to me, I was apprehensive about trying it...but years later, it remains a family favorite!

START TO FINISH: 25 MIN. • MAKES: 4 SERVINGS (1 1/2 CUPS SAUCE)

1 cup fat-free plain Greek yogurt

1 cup finely chopped peeled cucumber

1 tablespoon minced fresh mint

2 garlic cloves, minced

2 teaspoons snipped fresh dill

2 teaspoons lemon juice

1/4 teaspoon salt

PITAS

1 pound lean ground beef (90% lean)

1 small onion, chopped

1 medium Golden Delicious apple, finely chopped

1/4 cup raisins

2 teaspoons curry powder

1/4 teaspoon salt

8 whole wheat pita pocket halves

1. In a small bowl, mix the first seven ingredients. Refrigerate until serving.

2. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. Add apple, raisins, curry powder and salt; cook until apple is tender, stirring occasionally. Serve in pita halves with sauce.
