“Japanese-style” iced coffees are one of a kind, in that they are brewed hot and consumed iced! In other words, the coffee is cooled right away, ready for drinking.
Coffee obtained by cold brewing is very different from hot-brewed coffee. There is no sourness to speak of; the coffee is well rounded, sweet, even syrupy. Coffee shops often sell coffee produced by this method in attractively labeled bottles.
1 The day before, place the ground coffee in a lidded container, pour in water, taking care to ensure that all the grounds are thoroughly wetted, then put the lid on. Leave to steep in the refrigerator for 12 to 16 hours.
2 The next day, lay a cloth filter in a sieve and place the sieve over a pitcher. Filter the coffee and add ice cubes.
