pickling spice

makes 4 tablespoons

12 dried small red chillies

1 teaspoon yellow mustard seeds

1 teaspoon fennel seeds

1 teaspoon dill seeds

1 teaspoon allspice

1 teaspoon cloves

1 teaspoon juniper berries

4 dried bay leaves, crushed

1 cinnamon stick, broken into small pieces

Put all the spices in a small bowl and combine well. Store in an airtight container for up to 1 month.
