CHEESY CHICKEN SLIDERS

These sliders are easy to prepare and can be customized with your favorite flavors. Using ground chicken is a great alternative to beef because it complements many flavors, and you can more easily control the amount of fat in the meal. Healthy fat, such as mashed avocado, is a great option to top these and will keep your kids full until breakfast. If you love meal prep, these can also be frozen. Just be sure to separate the raw patties with parchment and keep them in a sealed freezer bag.

Yield: 6 sliders, 1 per serving

1 lb (454 g) ground chicken breast

¼ cup (40 g) diced yellow onion

¼ cup (45 g) diced green bell pepper

½ cup (56 g) shredded mozzarella cheese

¼ tsp salt

¼ tsp dried parsley

¼ tsp garlic powder

⅛ tsp ground black pepper

1 tbsp (14 g) coconut oil

Lettuce for lettuce wraps or Magical Keto Rolls, for serving

In a large bowl, mix the ground chicken with the onion and bell pepper. Fold in the mozzarella and add the salt, parsley, garlic powder and black pepper.

Form the meat into six balls and flatten them into patties. Heat your skillet over medium heat and melt the coconut oil in the pan. Carefully place the patties into the pan, working in batches if necessary.

Cook for 5 minutes per side or until the meat is completely cooked and the internal temperature is at least 165°F (75°C).

Enjoy on a lettuce wrap or a Magical Keto Roll.
