5 passion fruit
generous ¾ cup milk
1¼ cups whole Greek yogurt
1 ripe mango, peeled, seeded and roughly chopped
½ teaspoon xanthan gum
1 tablespoon honey
1 Scoop out the insides of the passion fruit. Strain the juice into a bowl and leave to one side. Reserve the seeds for decorating, if you like.
2 Put the milk, yogurt, mango, xanthan gum, honey and passion fruit juice in a blender or food processor and process until smooth.
3 Churn the mixture in an ice-cream maker according to the manufacturer´s directions. Alternatively, pour the mixture into a shallow container and freeze 2 to 3 hours, stirring every hour to prevent ice crystals forming. Serve in scoops with a few seeds spooned over.
