Andrew F. Smith has taught culinary history at the New School in New York since 1995. He is the author or editor of twenty-five books, including American Tuna: The Rise and Fall of an Improbable Food (2012), Drinking History: 15 Turning Points in the Making of American Beverages (2012), and Food and Drink in American History: A “Full Course” Encyclopedia (2013). He serves as the editor in chief of the Oxford Encyclopedia on Food and Drink in America (2013) and series editor for the Edible series.
