Authentic Lebanese Fatteh
This perfect flavorsome recipe of Lebanese chicken Fatteh is the dish that will complete your dining table. The shredded chicken with the toasted nuts served with the creamy, warm yogurt makes an amazing combination of tastes.
Ingredients:

Plain yogurt- 30 oz

Chickpeas- 15 oz

Salt- to taste

Arabic pita bread- 1 (large)

Coarse sea salt- 1/2 tsp

Extra virgin olive oil- 2 tbsp (halved) + 1 tsp

Garlic cloves- 2 (chopped)

Pine nuts- 1/2 cup

Garlic powder- 1/2 tsp

Paprika- 1/4 tsp

Chicken breast- 1 lb. (boneless)

Thyme- 1/2 tsp

Parsley- 3 tbsp (minced)

Coriander- 1/2 tsp

White pepper- to taste

Instructions:
1. Wash and remove the excess liquid from the chickpeas.
2. Drizzle olive oil in a heated pan and toast the pita bread. Season with pepper and salt. Toss till the color of the bread changes to a golden brown. Move it to the chickpeas bowl.
3. Drizzle a tbsp of olive oil in a heated pan. Roast the pine nuts.
4. Cook the breasts of the chicken well. Sprinkle paprika, pepper, thyme, garlic powder, and salt on top of the chicken as a seasoning. When the chicken breasts start to release clear juice, turn off the heat.
5. Shred the cooked breasts of chicken and transfer them into the bowl of bread-chickpeas mixture.
6. Top the bowl of chicken mixture with minced parsley.
7. Drizzle a tsp of the oil in a heated saucepan. Sauté the minced cloves of garlic. Sprinkle the coarse salt and sauté.
8. Add the yogurt gradually and keep stirring continuously. Cook the yogurt mixture for about 4-5 minutes but don’t boil it.
9. Pour the prepared garlicky yogurt on top of the chickpea’s
mixture bowl. garnish with more parsley and bread if needed. Serve.
