Genuine Mediterranean Tabouli Salad

Ingredients
- ½ cup extra fine bulgar wheat
- 4 firm Roma tomatoes, finely chopped, juice drained
- 1 English cucumber, finely chopped
- 2 bunches fresh parsley, stems removed, finely chopped
- 12-15 fresh mint leaves, finely chopped
- 4 green onions. finely chopped (white and green)
- salt
- 3-4 tablespoons lime juice
- 3-4 tablespoons extra virgin olive oil
- Romaine lettuce leaves
- pita bread
Process

Wash bulgar wheat well and allow it to soak under water for 5 minutes.

Drain bulgar wheat well and set aside.

Add all vegetables, green onions, and herbs to a dish.

Add bulgur and season the mixture with salt.

Add lime juice and olive oil. Mix well.

Cover, refrigerate and allow salad to chill for 30 minutes.

Transfer to serving platter and serve with sides of pita and romaine lettuce.
