Authentic Chicken Costa Brava

Ingredients
- 1 20-ounce can pineapple chunks
- 10 skinless and boneless chicken breast halves
- 1 tablespoon vegetable oil
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 2garlic cloves, minced
- 1 onion, quartered
- 1 14-ounce can stewed tomatoes
- 2 cups black olives
- ½ cup salsa
- 2 tablespoons water
- 1 red bell pepper, thinly sliced

Process

Drain the pineapple chunks, but be sure to reserve the juice.

Sprinkle pineapples with salt.

Heat oil in a large frying pan over medium heat.

Add the chicken and cook until brown.

Combine the cinnamon and cumin and sprinkle over the chicken.

Add garlic and onion and cook until the onions are tender.

Add reserved pineapple juices, olives, tomatoes, and salsa.

Reduce heat, cover, and allow to simmer for 25 minutes.

Combine the cornstarch and water in a bowl.

Add the mixture cornstarch mixture to the pan and stir.

Add the bell pepper and simmer for a little longer until the sauce bubbles and thickens.

Stir in pineapple chunks until thoroughly heated.
