Greek Chicken Shish Kebab of Amazement

Ingredients
- ¼ cup olive oil
- ¼ cup lemon juice
- ¼ cup white vinegar
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 pounds boneless and skinless chicken breasts, cut up into 1½inch pieces
- 6 wooden skewers
- 2 large green or red bell peppers, cut up into 1inch pieces
- 12 cherry tomatoes
- 12 fresh mushrooms
Process

In a large bowl, whisk in olive oil, vinegar, garlic, lemon juice, cumin, thyme, oregano, salt, and black pepper. Mix well.

Add the chicken to the bowl and coat it well by tossing it.

Cover the bowl with plastic wrap, refrigerate, and allow it to marinate for 2 hours.

Soak your wooden skewers in water for about 30 minutes.

Preheat grill to medium-high heat and lightly oil the grate.

Remove the chicken from your marinade and shake off any extra liquid.

Discard the remaining marinade.

Thread pieces of chicken with pieces of onion, bell pepper, cherry tomatoes, and mushrooms alternating between them.

Cook on grill for 10 minutes each side until browned on all sides.
