Mediterranean Black Olive Bread Pieces

Ingredients
- 3 cups bread flour
- 2 teaspoons active dry yeast
- 2 tablespoons white sugar
- 1 teaspoon salt
- ½ cup black olives, chopped
- 3 tablespoons olive oil
- 1¼ cups warm water (about 110 degrees Fahrenheit)
- 1 tablespoon cornmeal
Process

In a large bowl, combine flour, sugar, yeast, salt, black olives, water, and olive oil.

Mix well to prepare the dough.

Turn the dough onto a floured surface and knead well for 5-10 minutes until elastic.

Set dough aside and allow it to rise for about 45 minutes until it has doubled in size.

Punch the dough down and knead again for 10 minutes.

Allow it to rise for 30 minutes more.

Round up the dough on a kneading board, place upside down in a bowl, and line it with a lint-free, well-floured towel.

Allow it to rise until it has doubled in size again.

While the bread is rising up for the third and final time, take a pan, fill it up with water, and place it at the bottom of your oven.

Preheat oven to a temperature of 500 degrees Fahrenheit.

Turn the loaf out onto a sheet pan, lightly oil it, and dust with cornmeal.

Bake for about 15 minutes.

Reduce heat to 375 degrees Fahrenheit and bake for another 30 minutes.
