Astonishing Mint Tabbouleh

Ingredients
- ¼ cup fine bulgur
- 1/3 cup water, boiling
- 3 tablespoons lemon juice
- ¼ teaspoon honey
- 1 1/3 cups pistachios, finely chopped
- 1 cup curly parsley, finely chopped
- 1 small cucumber, finely chopped
- 1 medium tomato, finely chopped
- 4 green onions, finely chopped
- 1/3 cup fresh mint, finely chopped
- 3 tablespoons olive oil
Process

Take a large bowl and add bulgar and 1/3 cup of boiling water.

Allow it to stand for about 5 minutes.

Stir in honey and lemon juice and allow it to stand for 5 minutes more.

Fluff up the bulgar with a fork and stir in the rest of the ingredients.

Season with salt and pepper.
