Party Compatible Fresh Pineapple Sherbet with Ginger Fruits

Ingredients
- 1 8-ounce can pineapple chunks
- 1/3 cup orange marmalade
- ¼ teaspoon ground ginger
- ¼ teaspoon vanilla
- 1 11-ounce can mandarin oranges, drained
- 2 cups sherbet - pineapple, lemon, or lime
Process

Drain the can of pineapple well, reserving the juice.

In a medium-sized bowl, add the pineapple juice, vanilla, ginger, and marmalade; mix well.

Add pineapple chunks and mandarin oranges, and give the mixture a toss.

Chill fruit mixture and 4 stemmed sherbet dishes for about 15 minutes.

Spoon the sherbet evenly between the dishes and top with the prepared fruit mix.
